Sunday mornings at home are my favorite for obvious brunch reasons. My go to when I want something fast and easy is a simple avocado toast. I highly recommend a crunchy base such as a baguette or ciabatta and getting creative with your toppings. I love a good iced coffee with my avocado toast and because this was my last breakfast home before heading back to college, I treated myself with a Bolthouse Farms protein coffee shake. This contains whey protein concentrate so it’s a great source of protein to add to your breakfast.
Ingredients
- Baguette
- 1/2 Avocado
- Lime
- Salt
- Pepper
- Paprika
- 2 Eggs
Instructions
- Mash 1/2 avocado in a small bowl
- Add juice from 1/4 of the lime, salt, pepper and a pinch of paprika
- Toast baguette
- While bread is toasting, fry 2 eggs over easy
- Assemble your beautiful avocado toast
- Top with a pinch of salt if desired
