Because of my holiday nostalgia, I figured there was no better time to put a healthy twist on one of my favorite holiday treats, cookies! These are amazing for quick snacks on the go because they’re packed with healthy fats and are a great way to satisfy your sweet tooth without ruining your New Year’s resolution.
Ingredients
- 1/2 cup of coconut flour
- Pinch of salt
- 3/4 teaspoons of baking powder
- 3 tablespoons of coconut oil
- 3 tablespoons of unsalted butter
- 2 eggs
- A little less than 1/2 cup of blueberry maple syrup
- 1/2 tablespoon of vanilla flaxseed milk with added protein
- 1/2 tablespoon of vanilla extract
- Handful of frozen blueberries
- Handful of chocolate chips
Instructions
- Combine dry ingredients, coconut flour, salt and baking powder
- In a separate bowl, beat coconut oil, butter, syrup, eggs, milk and vanilla
- Combine dry ingredients to wet ingredients to desired consistency
- Stir in blueberries and chocolate chips
- Place clumps of dough onto cookie sheet covered with parchment paper and lightly flatten
- Bake at 360° for 10-15 minutes
- Yields about 15 cookies
