Blueberry Chocolate Chip Cookies

Because of my holiday nostalgia, I figured there was no better time to put a healthy twist on one of my favorite holiday treats, cookies! These are amazing for quick snacks on the go because they’re packed with healthy fats and are a great way to satisfy your sweet tooth without ruining your New Year’s resolution.


  • 1/2 cup of coconut flour
  • Pinch of salt
  • 3/4 teaspoons of baking powder
  • 3 tablespoons of coconut oil
  • 3 tablespoons of unsalted butter
  • 2 eggs
  • A little less than 1/2 cup of blueberry maple syrup
  • 1/2 tablespoon of vanilla flaxseed milk with added protein
  • 1/2 tablespoon of vanilla extract
  • Handful of frozen blueberries
  • Handful of chocolate chips


  • Combine dry ingredients, coconut flour, salt and baking powder
  • In a separate bowl, beat coconut oil, butter, syrup, eggs, milk and vanilla
  • Combine dry ingredients to wet ingredients to desired consistency
  • Stir in blueberries and chocolate chips
  • Place clumps of dough onto cookie sheet covered with parchment paper and lightly flatten
  • Bake at 360° for 10-15 minutes
  • Yields about 15 cookies
