Antioxidant Oat Flour Pancakes

Screenshot_20181204-234830_2Not going to lie, this is not the first time I’ve posted pancakes on my blog. What can I say? When I’m home, I want to cook as much as possible, and they’re my go to because they’re the best! These are blueberry pomegranate oat flour pancakes and they turned out better than I expected! Here’s the recipe:

Ingredients

  • 1 container of Icelandic Provisions Skyr Blueberry & Bilberry yogurt
  • 1 container of Icelandic Provisions Skyr Vanilla yogurt
  • 1 cup rolled oats
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Salt
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 1/4 pomegranate
  • 1/2 cup frozen blueberries

Instructions

  • Put all ingredients (except fruit) in the blender and blend until smooth
  • Heat a pan with coconut cooking spray
  • Pour desired amount of batter into the pan and add pomegranate seeds and blueberries
  • Cook until pancake starts to brown
  • Repeat until batter is gone or put extra batter in the refrigerator for later
  • Top with blueberry maple syrup and berries
