Hi guys! So this is my third salad in my Salad Series and the first in my Dining Hall Hacks Series. I’m not very familiar with a lot of college dining halls other than my own so don’t be afraid to customize these recipes to fit what your dining hall offers! This is my Blue Cheese Protein Salad and it’s packed with proteins and fats to keep you full. At UMass we always have hard boiled eggs offered at breakfast so I took two and put them in my fridge until lunch. Then I chopped them up along with two chicken breasts, celery, tomato and onions. I put them on top of some spring mix greens and sprinkled on some blue cheese and blue cheese dressing. Let me know what you think!
