Low Carb Nachos

Nachos are one of my biggest vices, especially the calorie loaded restaurant appetizers. But I wanted to make my own healthy nachos at home that wouldn’t ruin my progress. These Flat Out tortillas make an amazing base because an entire wrap is only 90 calories, 14 grams of carbohydrates, and they really crisp up well with some salt and pepper. Topped with a moderate amount of cheese and all the veggies that will fit and you have a perfect, guilt free meal.

Ingredients

  • Flat Out light original tortilla
  • 1/2 cup mozzarella cheese
  • 1/4 cup yellow bell pepper
  • Red onion
  • Black olives
  • Jalapenos
  • Spinach

Avocado Topping

  • 1 avocado
  • Salt
  • Pepper
  • Paprika
  • Lemon juice

Intructions

  • Slice tortilla into desired shape
  • Bake at 400 °F for just a minute or two to warm
  • Top with cheese, pepper, onion, olives, jalapenos and spinach
  • Put back into the oven until chips are crispy and cheese is melted
  • The tortilla chips will burn very easily so keep a close eye on them
  • Top with a large scoop of avocado (seriously do not be shy) and basil leaves IMG_20180814_183121_793
