Protein Pancakes

Pancakes are just my favorite thing in the whole world! I love making all types of protein pancakes whenever I have the time. After playing around with a couple different recipes, I have to say this one is my all time favorite. The pancakes come out beautifully fluffy and I love playing with toppings!   • 1 cup rolled oats
  • 1 cup vanilla Greek yogurt
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 scoop protein powder (I used 1UP Coconut Ice Cream)
  • Berries (optional)


  • Put all ingredients in the blender and blend until smooth
  • Heat a pan with coconut cooking spray
  • Pour desired amount of batter into the pan and cook until pancake starts to brown
  • Repeat until batter is gone or put extra batter in the refrigerator for later
