Pancakes are just my favorite thing in the whole world! I love making all types of protein pancakes whenever I have the time. After playing around with a couple different recipes, I have to say this one is my all time favorite. The pancakes come out beautifully fluffy and I love playing with toppings! Ingredients
- 1 cup rolled oats
- 1 cup vanilla Greek yogurt
- 3 eggs
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 scoop protein powder (I used 1UP Coconut Ice Cream)
- Berries (optional)
Instructions
- Put all ingredients in the blender and blend until smooth
- Heat a pan with coconut cooking spray
- Pour desired amount of batter into the pan and cook until pancake starts to brown
- Repeat until batter is gone or put extra batter in the refrigerator for later
- Add Greek yogurt and berries for topping
